Jordan's National Dish

Of course, when we discuss Jordanian food, we have to mention- at length- the most distinctive Jordanian dish, Mansaf.

Mansaf is a Bedouin dish for people who live in the Desert, and is often offered to celebrate a special occasion. Mansaf consists of Arabic rice, a rich broth made from dry sour milk (jameed), and either lamb or chicken. Whether Jordanians are celebrating a graduation, an engagement, or a wedding- Mansaf is commonly served. In addition, Mansaf is also served during condolences and as a means to patch up ties with others.

Mansaf on the menu is the greatest symbol in Jordanian culture for generosity. The level of generosity is determined by the amount of meat presented. Utensils are not commonly used when eating Mansaf. Guests feast from the communal dish using their hands. Due to the fact that it symbolizes a social community gathering, it is placed in the middle of the dinning setting.

 IF YOU THINK TO MAKE MANSAF YOU SHOULD DO THE FOLLOWING:

1- Whey (dried yoghurt/ jameed) is washed and soaked in water for an hour, then mashed with the blender moulinex, then dried out.

2- Meat is washed and put in a tray and soaked in water

3- Onion (chopped into squares) is added, then meat is boiled to be rather cooked.

4- Meat is removed and broth is taken.

5- Whey juice is mixed with the soup and left to boil, it can be thickened with cornstarch as wished.

6- Meat is added and it is kept on fire until soup and meat are cooked well.

7- Rice is cooked, and then two or three Arabic loaves are put in the tray.

8- Rice is put on the bread pyramidically, then pieces of meat are arranged on the surface.

9- Mansaf is decorated with the pine nuts and almonds.

10- Mansaf is served with hot whey juice and sprayed on mansaf as wished.

 Maklouba is a meat, fish or vegetable stew served with rice,

 

Musakhan is a chicken dish, cooked with onions, olive oil and pine nuts. This is baked in the oven on a thick loaf of Arabic bread (pictured). 

Also popular is the famous Jordanian sheish kebab, consisting of chunks of lamb or marinated chicken speared on a wooden stick and cooked over a charcoal fire with tomatoes and onions.
