Artichoke Soup
2 cans artichoke hearts, chopped
1 bunch green onions, chopped
1 stalk of celery, chopped
2 cloves garlic, chopped
1 qt. chicken broth
1 cup half and half
butter
season to taste
Sauté green onions, celery, and garlic in 2 tab. butter. Add seasonings and broth. Simmer 15 to 20 minutes.
Add artichoke hearts and simmer 10 minutes.
Add half and half and mix well. Simmer 5 to 10 more minutes and the soup is ready!
