BBQ Beef-Filled Wonton Cups
48 fresh or frozen wonton wrappers from 16 oz package, thawed
14 oz deli roast beef slices, chopped (about 3 cups)
3/4 cup barbecue sauce
4 oz shredded Monterey Jack cheese
Heat oven to 350°
Lightly spray miniature muffin pans with non stick cooking spray
Press 1 wonton wrapper into each cup, crimping edges to fit
Lightly spray with non-stick spray
Bake at 350° for 5 to 8 minutes or until light golden brown; remove from pans
Repeat process until all wrappers are baked
In small saucepan, combine beef and BBQ sauce over medium heat
Cook until thoroughly heated, stirring occasionally
Place 1 tbsp hot mixture in each wonton cup
Sprinkle with 1 tsp cheese
Place on ungreased cookie sheet
Broil 4 to 6 minutes from heat 30 to 45 seconds or until cheese is melted
