Benedictine Dip
2 medium cucumbers
1/2 medium onion
8 oz cream cheese
4 oz sour cream
salt & cayenne to taste
green food coloring (optional)
Peel & seed cucumbers
Grate and drain well
Grate onion and beat with cucumbers and cream cheese
Add enough sour cream to achieve dip consistency
Flavor with salt & cayenne and add food coloring if you wish
Serve with vegetable tray
