Beef Nachos
1/2 LB ground beef
1 tsp chili powder (Mexican blend)
1/2 tsp salt
1/2 tsp dried minced onion
1/8 tsp sweet paprika
2 Tbsp water
8 Restaurant-style corn tortilla chips
1/2 Cup refried beans
1-1/2 cups shredded cheddar cheese
1/2 C. shredded Monterey jack cheese
1/4 Cup diced onion
1 large jalapeno pepper
HEAT oven to 375°
Brown beef in skillet, crumble in small pieces.
Cook until it is no longer pink; drain.
ADD chili powder, paprika, salt dried onion & water.
Simmer on low for about 10 min.
Heat beans in small pan or in microwave, until hot.
MIX cheeses together in small bowl; set aside.
ARRANGE chips on baking sheet or on oven-proof plate (I use a large pie plate).
SPREAD about 1 Tbsp of beans on each chip.
SPRINKLE about 2 Tbsp of beef on each chip. Flatten beef with spoon so that it will hold the cheese.
Place a handful of cheese on each chip.
Sprinkle onion over the cheese.
Place a slice of jalapeno on each chip.
BAKE for 8-10 minutes or until cheese melts.
Serve with salsa, guacamole or sour cream.
