Armadillo Eggs
1 (8 ounce) can whole jalapeno peppers
1 (6-ounce) package grated
Monterey Jack cheese
1 1/2 cups baking mix
1 (16 ounce) package bulk breakfast sausage
2 eggs, beaten
1 package oven-fry mix for pork
1 fire extinguisher
Preheat oven to 350º
Cut peppers in half and remove seeds.
Combine cheese, baking mix, and sausage in bowl. Mix well.
Place mixture around pepper halves to form egg shape.
Dip into eggs.
Roll in oven-fry mix.
Place on cookie sheet and bake for 25 minutes
