Chocolate Hazelnut Fruit Crepes

Recipe #1 Chocolate Hazelnut Fruit Crepes Use any fruit you would like - strawberries, kiwi, pineapple 1 cup chocolate hazelnut spread (like Nutella) 4 Crepes (basic recipe follows) 4 bananas, sliced 1 (7 ounce) can pressurized whipped cream Spread 1/4 cup of chocolate hazelnut spread onto each crepe. Arrange 1 sliced banana down the center of each one. Roll up, and place in a warm skillet over medium heat. Let them warm up for about 90 seconds. Transfer to plates, and serve topped with whipped cream. Basic Crepes 1 cup all-purpose flour 2 eggs 1/2 cup milk 1/2 cup water 1/4 teaspoon salt 2 tablespoons butter, melted In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot. Serves 4. Pattianne's Country Kitchen

Potato and Apple Salad with Cream Cheese Dressing Recipe #2 Potato and Apple Salad w/Cream Cheese Dressing 1 lb. (500 g) small red potatoes, diced 2 tsp. (10 ml) chopped parsley 1/2 tsp. (2 ml) sugar 1 tsp. (5 ml) salt Ground black pepper, to taste 1/2 cup (125 ml) whipping cream 1 tbsp. (15 ml) Dijon mustard 1 tbsp. (15 ml) fresh lemon juice 2 medium red apples 2 celery ribs, sliced 1/4 cup (50 ml) chopped green onions Walnuts or crumbled blue cheese In a covered saucepan, simmer potatoes until tender, about 7 to 10 minutes; cool. In a small bowl, whisk next seven ingredients. Dice apples and combine in a large bowl with cooled potatoes, celery and green onions. Pour cream dressing over the potato mixture and toss. Sprinkle with chopped walnuts or blue cheese. Serves 4. Pattianne's Country Kitchen
