Ingredients for the crust:
2 cups graham cracker crumbs (500 ml)
1/4 cup butter, melted (60 ml)
2 Tbsp honey (30 ml)
Ingredients for filling:
8 ounces cream cheese, softened (225 gr)
8 ounces tofu (225 gr)
1 egg
6 ounces carob or pieces of milk chocolate, melted (170 gr)
1 tsp vanilla (5 ml)
whipped cream (opt.)
Directions:
Mix crust ingredients together and press in an 8" (20 cm) pie plate, sides and bottom.
In a food processor or with a blender (I use an electrical egg beater) blend cream cheese, tofu, egg, carob or chocolate and vanilla.
Take care to scrape the sides of the bowl regularly to make sure all ingredients are well blended.
Make sure there are no cheese clumps.
Place the filling in the crust using a spoon.
Bake 30 to 45 minutes at 350°F (180°C).
Cool toroughly before serving.
Yields: 6-8 servings.
Preparation time: 1 hour plus cooling time
