Everything Cookies
1 1/2 cups low-fat granola
1 cup golden raisins
1 cup old-fashioned rolled oats
1 cup chocolate chips
2 cups walnut halves
1/2 cup white chocolate chips
1 2/3 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup packed dark-brown sugar
1/2 cup granulated sugar
1 cup (2 sticks) unsalted butter, cut into small pieces
2 eggs
1 teaspoon vanilla
1. Heat oven to 375 degrees.
2. Toss together granola, raisins, oats, chocolate chips, walnut halves, and white chocolate chips in a large bowl until well combined.
3. Sift flour, baking soda, baking powder and salt in a small bowl; stir with a whisk to combine ingredients well.
4. Place brown sugar and granulated sugar in a food processor (or use a large bowl and an electric mixer). Whirl to combine. With processor running, add butter, a few pieces at a time, whirling until smooth and creamy. Add eggs and vanilla. Whirl until incorporated, scraping down sides of work bowl as needed. Add flour mixture. Pulse on-and-off motions until just combined.
5. Scrape mixture from food processor into bowl with chocolate chip mixture; stir to combine ingredients well.
6. Shape dough into 2-inch balls; place balls 2 inches apart on un-greased baking sheets.
7. Bake in heated 375 degree oven 12 to 15 minutes or until light brown.
8. Cool cookies on baking sheets on a wire rack until firm enough to lift with a spatula. Remove cookies to rack to cool completely.
