The Carousel at Suess Landing in Islands of Adventure has a very creative way to make it accessible. A ramp slides out from a stationary seating position to allow a wheelchair user easy loading onto the ride. Only room for one so friends must get their own mount.
Men in Black is quite an adventure. Staying in your chair is no problem you just have to go into another room to be locked into a docking pad then rolled out and onto the ride. Great shoot em up type ride with full effects.
This is a flying fish ride at Suess Landing in Islands of Adventure that allows access by having a side panel slide completely out with a fold down ramp behind. There's even room for one person to accompany  wheeler.

Ok so we spend a lot of time fooling around.
This is the ET Adventure ride at Universal Studios. Unique in that you can stay in your chair while you simulate flying through the air on your bicycle. Cool !
At Universal Studios riding in The Jaws boat is a damp undertaking. Tie downs are all that's required if you stay in your chair. Companions can sit next to you.
The Terminator experience is totally accessible by adding a vibration rail that you back up against so you can enjoy the same special effects that the other viewers experience in their seats. There is also a pad but I find this rail to be just as effective. It's at Universal Studios.
